Caramel Date Pinwheels

2/3 c. butter, softened
1 c. packed brown sugar
1 egg
1 t. vanilla
1 3/4 c. all-purpose flour
1/2 t. baking soda
1/4 t. salt
Filling
1 pkg (8 oz.) chopped dates
1/2 c. water
1/3 c. sugar
1/2 c. finely chopped walnuts
Mix the butter and brown sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture. Refrigerate for at least 2 hours until easy to handle
Meanwhile, in a large saucepan, combine the dates, water and sugar. Cook and stir over medium heat until thickened, about 5 minutes. Stir in the walnuts. Cool completely
Divide the dough in half; roll one portion between two sheets of waxed paper into a 12 x 10 rectangle. Spread with half of the filling. Roll up into a tight jelly roll, starting with the long side; wrap in waxed paper. Repeat with the remaining dough and filling. Freeze or refrigerate.To bake, slick into 1/4 inch sliced and bake at 375° for 8-10 min.These are great!!
