Grandma’s Fluffy Cinnamon Sugar Donut Muffins
Ingredients:
1 ½ cups all-purpose flour
½ cup granulated sugar
1 ½ teaspoons ground cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup milk (or up to 1 cup if batter seems too thick)
⅓ cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
For the Topping:
¼ cup granulated sugar
1 ½ teaspoons ground cinnamon
2 tablespoons melted butter (for dipping)
Instructions:
1️⃣ Preheat & Prep: Preheat oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
2️⃣ Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, cinnamon, baking powder, baking soda, and salt.
3️⃣ Mix Wet Ingredients: In a separate bowl, whisk milk, melted butter, egg, and vanilla until well combined.
4️⃣ Make the Batter: Pour the wet mixture into the dry and stir until just combined. If the batter feels stiff, add a bit more milk (up to ¼ cup extra) until soft and scoopable, but not runny.
5️⃣ Bake: Spoon the batter into muffin cups, filling each about ¾ full. Bake for 18–20 minutes, or until the tops are golden and a toothpick comes out clean.
6️⃣ Cinnamon Sugar Topping: While muffins are still warm, dip the tops in melted butter, then roll them in the cinnamon-sugar mixture.
7️⃣ Enjoy Warm: Best served warm and fresh — just like Grandma used to do!
