Crockpot Cabbage Soup
Ingredients:
- 1 medium cabbage, chopped
- 1 large onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, including juices
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 bay leaf
- 1 cup green beans, trimmed and cut into pieces
Instructions:
1. Warm the olive oil in a large skillet over medium heat. Add the onion, carrots, and celery. Cook for approximately 5 minutes, until the vegetables start to soften. Stir in the minced garlic and cook for another minute until aromatic.
2. Move the sautéed mixture to a slow cooker. Add in the chopped cabbage, the entire can of diced tomatoes, vegetable broth, thyme, oregano, salt, pepper, bay leaf, and green beans. Mix thoroughly.
3. Secure the lid on the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and flavors are well blended.
4. Discard the bay leaf before serving. Taste and adjust the seasoning if needed. Serve the soup warm and enjoy.
